Somebody wrote in asking if I had a recipe for some type of power bar. I thought I already posted this, but can't find it so forgive me if this is a repeat!
Cacao Chip Meal Replacement Bars
Warning: These are dangerously good. You can go ahead and plan on devouring the entire pan.
Ingredients for the Dough
- 3 cups oats
- 1/2 cup natural nut butter (I used almond butter. You could use peanut, chunky peanut, cashew, etc)
- 3 Tablespoons unsweetened cocoa powder
- 3 Tablespoons cacao nibs (or real chocolate chips if you are really want to live on the edge.)
- 4 scoops chocolate protein powder (I used Biotest Low Carb Metabolic Drive chocolate protein powder)
- 1/8 cup Stevia
- 1 cup unsweetened vanilla almond milk
Mix the above ingredients until a thick sticky batter is formed. Be patient, it may take awhile. Lightly rub a 9 x 9 baking dish with a tiny bit of coconut oil to prevent the bars from sticking. Smash the dough into the baking dish. Refrigerate overnight. Slice into nine bars.
Ta-daaaa! Done.
These should keep fine for a day or two on the counter, but any longer and you'll want to stick them in the fridge.
