Pumpkin Ice Cream
- 1/2 oz of pecan crushed
- 1 scoop vanilla protein powder
- 1/4 cup pure pureed pumpkin
- cinnamon to taste
Directions:
- Mix vanilla protein with a small amount of water to make a pudding texture.
- Stir in pumpkin.
- Sprinkle with crushed pecans.
Freeze and enjoy! Keep fighting those cravings in a healthy way!
Pumpkin Pancake
Fight that craving for pumpkin pie with this recipe!
Ingredients:
- 1/3 cup oatmeal- dry
- cinnamon
- stevia
- 1/2 cup pure pureed pumpkin
- 3 egg whites
Directions:
- Mix all together. pour in a pan, cook on one side then flip like a pancake!
- Can be served hot or cold. Amazing either way.
I then put 1/2 scoop on vanilla protein pudding on top... like icing (vanilla protein mixed with a little water- should be thick)
Pumpkin French Toast
- 4 pieces of Arnold Sandwich Thins (8 when separate)
- 3 egg whites
- 1/4 cup pure pumpkin puree
- cinnamon to taste
- Stevia
Whisk up...
Directions:
- Dip the bread in the mixture on both sides and place on hot pan.
- Dip in vanilla protein pudding 1.5 scoop with a little water then stir- make as thick as you like.
- I then toast my french toast to make extra crispy.
This makes two servings for my diet plan. Enjoy!
