I picked this recipe up from a woman in Thailand who was making these on a cooker tied to the side of her motorcycle. Yeah, you read that right. Check out the picture and you’ll notice the handlebars in the foreground: everything else in the picture is attached to that bike in some way or another. She drove it as if she were tacking a yacht.
Anyways, in comparison to the complexities of riding a motorcycle with everything including the kitchen sink attached, this recipe is once again as basic as they come.
You’ll need:
- 500g ground Free Range Chicken
- 1 tsp Chilli Flakes
- 1 tsp ground Coriander
- A small handful of chopped, fresh coriander
- The juice of 1 lime
- Salt and pepper
(Enough for 2)
Directions:
1. Mix all of the ingredients together in a bowl and then roll them into balls. The ground chicken can be a bit wet. If it is, you can form what the French call "quenelles." Basically, this means taking a spoonful of the mixture and using another spoon to create a football-shaped meatball (without getting your hands dirty). If all that sounds like too much of a hassle, just make two big ass chicken burgers with the mix instead.
2. Drop the meatballs into a hot pan with a heaping teaspoon of coconut oil in order to get that authentic Thai taste. Easy though!
