For Christmas this year, I received a food mixer. However, to be completely honest, I was a bit skeptical of whether I’d get much use out of it. In fact, I imagined that it would be sitting at the side of the kitchen gathering dust.

Oh, but how wrong I’ve been! I’ve been using it non-stop to make protein bars and cakes of all varieties. And I have come across some beauties, including this spiced orange cake.

The base of this recipe follows that of the protein brownies recipe published last year. This is a great base to work from and I encourage you to experiment with different flavor combinations. In that recipe, we used different bowls to mix different ingredients. Then, we combined everything together and baked the resulting mixture. That was pretty simple. However, with a mixer, it gets simpler still.

All you need to do here is throw the ingredients listed below into the mixer and mix until everything is combined. Next, pour the mixture into a 9x9” baking tin and bake at 350 degrees F for about 25 minutes. Once a toothpick inserted into the center comes out clean, turn the cake out onto a cooling rack. Finally, cut it into eight cake bars and enjoy! They will even keep for up to five days in the fridge.

The preparation, mixing, and washing of the bowl and baking tin literally takes all but five minutes. Better yet, you need no cooking or baking skills whatsoever to pull off this great tasting, protein-packed snack or dessert. With nutrition this simple, there is no excuse to eat the processed crap you pick up from the supermarket, especially those $3.00 protein bars that contain more sugar than protein.

Ingredients:

  • 200g ground almonds (you can use ground oatmeal if you want the carbs)
  • 1 cup Vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 4 eggs
  • 1 cup Greek yogurt
  • The rind and juice of 1 orange

*You can, of course, do this without a mixer. Just use a big bowl and get stirring!
